Gluten Free Bread
I love using this bread for stuffing

This is a great bread that hold together well for stuffing. I dried it out for a couple days. Then I baked it for just a bit before using it for my stuffing.

Ingredients
2 cups white rice four
1 cup corn starch
3 teaspoons xanthan gum
1 1/2 teaspoons salt
2 tablespoon fast rise yeast
3 eggs
2 tablespoons sugar
1 1/2 cups lukewarm water
2 tablespoons melted butter
1 teaspoon vinegar
melted butter and 1/2 teaspoon of Herbs de Provence for brushing loaf.
Instructions
In a bowl with a heavy duty mixer,place flours,xanthan gum,salt,and egg. Blend on low speed.
In a small bowl dissolve the sugar in the water, and add yeast.
Wait until the mixture foams slightly, then blend into the dry ingredients.
Add the butter, eggs, and vinegar. Beat on high for 3 minutes.
Form into two loaves. Cover and let rise in a warm place until doubled. About 30 minutes.
I like to brush the bread as it comes out of the oven when it is still very hot with the butter and herb mixture.
Preheat oven to 400 Bake for about 40 minutes. Ovens vary so you may need to check it at 30 minutes.
