This stuffing is really easy to put together. The flavor makes it seem like it has been cooking longer then the time it takes.
| Prep time | 15 minutes |
| Cooking time | 20 to 30 minutes |
| Servings | 6 to 8 people |
Ingredients
8 cups of Gluten free bread
1 teaspoon dried thyme
1/2 onion chopped
2 celery stems sliced
1 apple diced
1 cup chopped fresh cranberry
2 garlic cloves chopped
1 Tablespoon butter
2 Tablespoons olive oil
2 cups chicken stock
1/2 teaspoon salt
pinch pepper
Instructions
Cube our bread and place in a large bowl.
In a sauce pan add olive oil on medium heat.
Add the celery and onion to the pan.
Then add the chopped garlic.
When the celery and the onions are just starting to be soft
(about 6 minutes)Add the butter and poor over the bread mixture.
Then add all dry ingredients, and chopped apple.
Poor the stock over the bread mixture. Stir carefully with a large spatula just until blended.
Poor into a casserole dish.
Bake in a 350 oven for 20 minutes
NOTE: I used this bread recipe for the bread in this stuffing. I did chop it and dry it out in the oven on 400 for about 20 minutes stirring to make sure the bread didn’t burn. I added about 1 tablespoon of olive oil to the bread before baking. Here is the recipe: http://gling.com/recipes/gluten-free-bread/
