Gluten-free Mushroom Soup

Makes a good mushroom soup, which I have never been able to find commerically gluten free. Basic white sauce can be used for other soups and applications as well.

Ingredients
Soup:
1 recipe basic white sauce (below)
approx. 12 medium to large brown mushrooms
3 tbsp butter
1/2 tsp salt (or to taste)
2 cups gluten free chicken broth
Basic white sauce:
4 tbsp butter
1 1/2 cup milk
1/4 tsp salt
1/4 tsp fresh ground pepper
2 1/2 tbsp sweet rice flour
1/4 cup milk
Instructions
Soup:
Roughly chop the mushrooms, saute in the 3 tbsp butter.
Make the white sauce (see below) in a large sauce pan.
Blend the mushrooms along with any butter left in saute pan; salt and chicken broth into the white sauce.
Cook over low heat, stirring frequently, for 10 to 15 minutes to merge the flavours.
Basic White Sauce:
Over low heat melt butter in 1 1/2 cups milk, salt and pepper.
Make a smooth paste of 2 1/2 tbsp sweet rice flour and 1/4 cup milk.
When butter has melted, add sweet rice flour paste slowly to mixture.
Stir over low heat until thickened.
