Harvest Thyme Potatoes
A tasty change from the ordinary potato dish.

Full of amazing flavor, this potato dish doesn't last long on any dinner or buffet table.

Ingredients
3 1/2 pounds Yukon Gold Potatoes
salt and pepper to taste
3/4 teaspoon dried thyme
3 cups cheddar cheese
3 Tablespoons rice flour
1 1/3 cup half and half
1 1/3 cup chicken stock
1/4 cup Dijon mustard
Instructions
Preheat oven to 400 degrees. Spray a 9×13 inch baking pan with non stick cooking spray. Scrub and slice potatoes into 1/8 inch slices. Arrange a third of the potatoes in the pan. Season with salt, pepper, 1/3 of the thyme, 1/3 of the cheese, and 1/3 of the flour. Continue adding layers until you have a total of 3 layers with all of the ingredients as in the first layer. Combine the milk, stock and mustard in a bowl. Pour over the potatoes. Bake 50 to 60 minutes or until the top is golden and crusty and potatoes are tender.
