Here Comes Trouble Brownies safe

A wonderful brownie recipe.

You can still have delicious brownies even if you're allergic to gluten.

Prep time 15 minutes
Cooking time 30 minutes
Servings 12

Ingredients

Brownies:
1/2 cup butter
2 squares unsweetened chocolate
1 tbsp coconut oil (or other cooking oil)
1 cup sugar
1 tbsp unsweetened cocoa powder
1/4 cup gluten-free flour (see notes*)
1/4 tsp xanthan gum (optional)
2 tbsp vanilla Jell-O instant pudding mix
2 eggs
1 tsp vanilla

*Note 1 – The recipe author recommends making your own gluten-free flour by combining half rice flour and half corn starch.

*Note 2 – You can also make your own gluten-free flour by combining 4 cups rice flour, 4 cups bean flour, 4 cups potato starch, 2 cups tapioca flour, and 7 tsp guar gum.

Frosting:
1/2 bag semi-sweet chocolate chips
2 tbsp butter
Few tbsp powdered sugar
Chopped nuts (optional)

Instructions

Brownies:
1 – Melt butter, unsweetened chocolate, and 1 tbsp oil in 8-inch square baking pan. (You can put them in the oven for 4 to 5 minutes while it preheats and you assemble the other ingredients. Be careful not to overheat it and burn the chocolate.)

2 – Add the sugar, unsweetened cocoa powder, gluten-free flour, xanthan gum, instant pudding mix, 2 eggs, and vanilla to the baking pan.

3 – Stir until smooth. Bake 27 to 30 minutes at 350 degrees. Cool before frosting.

Frosting:
1 – Gently soften 1/2 bag chocolate chips plus butter in the top of a double boiler (or a metal or glass mixing bowl set over boiling water).

2 – When thoroughly melted, stir in powdered sugar until smooth.

3 – Spread over brownies and if desired, sprinkle with chopped nuts while still warm.
