Homemade Caramel Apples
No more unwrapping all of those caramels!

I expected this to be more difficult than it was, no more unwrapping caramels for this busy mom!

Ingredients
1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 (14 oz) can sweetened condensed milk
2 teaspoons vanilla extract
8 to 10 wooden sticks
8 to 10 apples, washed and dried
Instructions
Insert a wooden stick into each apple. Spray cooking spray on a cookie sheet. In a medium saucepan combine the butter, brown sugar, corn syrup and milk. Bring to a boil over medium heat. Cook and stir until a candy thermometer reads 248 degrees (firm ball stage), this can take up to 40 minutes. If you are looking for a softer caramel, cook it just to about 244 or 245 degrees. Remove from heat and stir in vanilla. Dip each apple into hot caramel mixture, turn to coat.
