Honey-Apple Glazed Turkey/Chicken

Ingredients

3/4 cup thawed apple juice concentrate
1/3 cup honey
1 tablespoon ground mustard
1 bone in turkey breast (6 7 pounds), or chicken of similar weight (or two chickens)

Instructions

In a small saucepan, combine the apple juice concentrate, honey and mustard. Cook over low heat for 2-3 minutes or just until blended, stirring occasionally.

Place turkey breast on a baking rack in a roasting pan. Pour half of the honey mustard mixture over the top. Bake uncovered in a 325 degree oven until a meat thermometer reads 180 degrees. Baste with reserved glaze every half hour until done, use pan juices to baste as well. Loosely cover with foil if the meat begins to brown too quickly. Leave covered once you remove it from the oven for 15 minutes before carving.
