Individual Pumpkin Puddings without the Crust... safe

If you don't like or can't have pie crust you will like this.

This is just a very simple recipe for pumpkin pudding. We top it with cream. The kids ate these all up.

Prep time 10 min
Cooking time 30 to 40 minutes
Servings about 6 to 8 ramekins

Ingredients

1 can 15 ounces of pumpkin puree
3/4 cup light brown sugar, packed
1 1/4 teaspoon ground nutmeg
1/2 teaspoon pumpkin pie spice
1/2 teaspoon salt
1 1/2 teaspoons vanilla
3 Large eggs, slightly beaten
1 3/4 cup milk

Instructions

Preheat oven to 350

In a large bowl, combine all ingredients and whisk or beat on low seed until blended. Pour into the prepared casserole and bake for about 30 to 40 minutes, or until knife inserted comes out clean.
