Italian Sandwich Cookies safe

A delicate yet crunchy cookie that will satisfy any chocolate craving this holiday season!

A tasty combination of chocolate and orange, a beautiful cookie that is easy to make and will delight your guests.

Ingredients

Cookies:

1 cup unsalted butter, room temperature
2/3 cup sugar
1 cup gluten free flour blend (your favorite for cookies)
1 cup fine cornmeal
1/3 cup cocoa powder
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon xanthan gum
zest from 1/2 an orange

Orange Filling:

1/2 cup unsalted butter, room temperature
3/4 cup powdered sugar
zest from 1/2 an orange
Pinch of salt

Instructions

To make cookies: In a large bowl cream together the butter and sugar until light and fluffy. In a second bowl, stir together the remaining ingredients. Add the dry ingredients to the butter mixture and stir to combine with a wooden spoon. Place the dough on a sheet of plastic wrap and shape into a log about 1 1/2 inches thick, much like you would for refrigerator cookies. Seal in plastic wrap and place in the refrigerator for 30 minutes to 24 hours.

Slice dough 1/4 inch thick and place cookies onto a heavy baking sheet, bake for 15 minutes in a 350 degree oven. Place baking sheets on a wire rack to cool cookies.

To make the orange filling: Combine the ingredients in a medium sized bowl. Use an electric mixer to cream the ingredients together.

To assemble the cookies, place about a teaspoon of Orange Filling on a cookie. Top with another cookie and press the cookies together. Store in an airtight container.
