Lemon Butter Bars
A crowd pleaser

These are very hard to tell that they are Gluten Free

Ingredients
Crust Ingredients:
1 cup Pamela’s mix
1/2 cup Butter
1/4 cup sugar
Filling Ingredients:
3/4 cup sugar
3 tablespoons lemon juice
2 tablespoons Pamela’s mix
1 teaspoon freshly grated lemon zest
1/4 teaspoon baking powder
powder sugar for on top of bars
Instructions
Heat oven to 350
Combine all crust ingredients in a small bowl.
Beat on low speed until mixture resembles crumbs.
Spread/press onto an 8 inch square pan.
Bake until edges are golden brown.
Meanwhile combine all the filling ingredients in a small bowl.
Mix well.
Poor filling onto the partially cooked crust.
Continue baking for about 15 to 20 minutes or until filling is set.
Sprinkle some powdered sugar on bard as soon as they are done. Then again when they are cut and cooled.

How frustrating...I don't have a clue what the ingredients in Pamela's mix are---which makes it rather difficult to follow the recipe! I would rather bake and cook from scratch than with prepared ingredients. I guess I'll just have to tinker with this idea. Thanks anyway for the inspiration, if not the recipe.

Your welcome. I too prefer to bake from scratch. I thought that this might be of help to others who are looking to cook with a prepared ingredient. I know it would be very easy to do from scratch though. Have fun creating.
