Light and Fluffy Chocolate Cake safe

Easy and worth it!

These cupcakes taste just like they were made with flour that has gluten in it. They are light and wonderful. You could easily use this recipe for a layer cake. You might need to double it though.

Ingredients

1 cup super fine sorghum flour

1/2 cup chestnut flour

1/2/ cup cocoa

3/4 tapioca flour

1 tsp guar gum

1 tsp salt

3 tsp baking powder

1 1/2 white sugar

1/3 plain yogurt

2/3 mayonnaise

2 tsp Vanilla

2 eggs

2 egg whites

Frosting

2 cups powdered sugar

1/3 cup cocoa

2 tbs agave nectar

1/4 cup milk

2 tsp chocolate extract

1 tsp butter melted

Instructions

Preheat oven to 350 degrees

Prepare your pan. I used a muffin pan.

Mix all dry ingredients including the sugar in a medium bowl.

Mix the wet ingredients in a large bowl.

Bake for about 20 minutes. Cool completely.

Poor all ingredients into medium bowl. Mix with a hand mixer until well blended. Lightly spread on the cupcakes.
