Mochi safe

Sweet rice flour cookie bar.

Moist cookie bar.

½ cup butter
1 lb. Mochiko sweet rice flour (or other brands) (usually comes in a box)
2 ½ cups sugar
1 tsp. baking powder
3 c. coconut milk
5 eggs, beaten
1 tsp. vanilla
1 cup flaked coconut (optional)


Preheat oven to 350 F. Melt and cool butter. Combine dry ingredients; then mix all together until smooth. Bake in an ungreased 9 × 13 pan for 1 hour.

    Sounds interesting, may have to try this one. Will any sweet rice flour work or is there something special about Mochiko flour? I haven't come across that in our area. I'll have to look. :-)
