Old-fashioned Molasses Cookies
As old-fashioned as they get!

Use dark blackstrap molasses for stronger molasses flavor. These are great served warm with a glass of milk.

Ingredients
2 and a half cups gluten free flour mix (search for “flour” in Gling’s recipes for some great options!)
1/2 tsp xantham gum
1 tsp baking soda
1/2 tsp ginger
1/4 tsp ground cloves
1/2 tsp cinnamon
(or exchange ginger and cinnamon for 2 tsp Allspice)
1/8 tsp salt
1 stick butter
1/2 cup packed brown sugar
1/2 cup molasses
1 egg
1/2 cup buttermilk
Instructions
Preheat over to 350.
Mix GF flour mix, xantham gum, baking soda, spices and salt.
Cream butter, add sugar and beat until fluffy. (approx 5 minutes). Add molasses while stirring. Alternate adding beaten egg and dry ingredients in small amounts until well-mixed, while stirring.
Roll dough into 1.5 inch balls and place on parchment lined cookie sheet about 2 inches apart, flatten each ball slightly with your palm, (or you can use a cookie stamp, pressing stamp into sugar before stamping each cookie.)
Bake for 8-12 minutes. The cookies transfer easier of you wait a few minutes after baking before transferring them to the cooling rack.

Are these cookies a soft cookie or a crunchy one? I'm looking for a crunchy cookie to use in a pie crust recipe. :-) These sound wonderful!

These are REALLY good! No one would know they are gluten free. I used TanyaG's flour mixture to make them and they turned out great! So good!

They are really good and seemed to work well in my cheesecake crust. :-) I'll let you know how it turned out. :-)
