Onion Crackers
Delicious crackers for snacking and so easy to make!

This recipe is an adaptation of Bette Hagman's Onion Cracker recipe in her cookbook, "The Gluten-Free Gourmet Cooks Fast and Healthy". They are so quick and easy to prepare and will be the hit of the party for sure! Great snack for Super Bowl parties or just for munching on while playing cards with friends. No one will guess they are gluten free. Good thing they are easy to make, they won't last long with a crowd.

Ingredients
1/2 cup garbanzo bean flour or light bean flour
1/4 cup sweet rice flour
1 teaspoon baking powder
1/2 to 3/4 teaspoons salt (the recipe called for 3/4 teaspoon, but I almost think it was too salty, salt it to taste)
3/4 teaspoon paprika (I used smoked paprika)
1/2 teaspoon xanthan gum
2 teaspoons sugar
2 tablespoons butter or margarine
1 tablespoon oil
1 to 1 1/2 teaspoon granulated onion (depending on taste)
1/2 to 1 teaspoon Herbs De Provence
2 to 3 tablespoons water
Instructions
Heat oven to 325 degrees.
In a medium bowl, blend together the flours, baking powder, salt, paprika, xanthan gum, and sugar. Cut in the margarine or butter and oil until mixture feels like coarse crumbs. Add the onion and water and stir into a ball. If too dry, add extra water by the teaspoonful.
Place ball on oiled foil (or a silicone mat) the size of a baking sheet. Roll to 1/8” thick, using plastic wrap over the dough to prevent it from sticking. Slide the foil or baking mat onto the baking sheet and score into 1 1/4” squares. Prick with a fork. Bake for 12-15 minutes or until lightly browned. This is important for a crisp cracker. Remove from oven and allow to cool before breaking into crackers. Makes about 4 dozen crackers.
