Onion Rings with a Kick safe

These have tons of flavor, but not too spicy.

Onion rings with a bit of a kick...loaded with flavor! Pair them with a horseradish dipping sauce and you'll have a winner for your next party.

Ingredients

1 cup white rice flour
1 Tablespoon chili powder
1 teaspoon cayenne pepper
1 teaspoon salt
2 large egg yolks
1 cup gluten free beer

Oil for frying
2 white onions, cut into 1/2 inch thick rings and separated

Instructions

In a medium sized bowl, whisk together the dry ingredients. Gradually whisk in the egg yolks and beer until you have a smooth thick batter. If you need more beer, add enough to make the batter about the consistency of pancake batter.

In a large, heavy dutch oven, heat 2 to 3 inches of oil to 360 degrees. Dip onion rings into batter and add to the hot oil a few at at time. Cook to golden brown, 1 to 2 minutes. Remove from oil with tongs and transfer to a tray covered with paper towels or a cooling rack to allow excess oil to drain off. Lightly salt if needed while still hot.
