Peanut Butter Chocolate Chip Muffins safe

These did not last even a full day at my house, my kids loved them! Chocolate and peanut butter, the perfect combination!

Prep time 10 minutes
Cooking time 22-25 minutes
Servings 12

Ingredients

1 3/4 cup gluten free flour blend
2/3 cup packed brown sugar
2 1/2 teaspoon baking powder
1 teaspoon xanthan gum
1/4 teaspoon salt
1 egg
3/4 cup milk
2/3 cup chunky natural peanut butter
1/4 cup vegetable oil
1 1/2 teaspoons vanilla
1 cup semisweet chocolate chips

Instructions

In a large mixing bowl, combine the flour, brown sugar, baking powder, xanthan gum and salt. In another bowl, combine the egg, milk, peanut butter, oil and vanilla. Add wet ingredients to the dry mixture, stir just until moistened. Fold in chocolate chips.

Fill greased or paper-lined muffin cups 2/3 full. Bake at 350 degrees for 15-17 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to wire racks.
