Peanut butter-chocolate millet bars safe

A sweet, healthy, and easy nut, chocolate and grain bar.

This is a celiac-friendly version of a crispy rice standard. Nuts and whole-grain millet puffs add nutrition while chocolate and peanut butter make the taste irresistible.

Prep time 10 - 15 minutes
Cooking time 3-5 minutes
Servings 30 small bars

Ingredients

2 cups millet puffs (in cereal section of some stores)
3/4 cup chopped nuts – pecans, cashews, etc. Mixed nuts OK
3/4 cup peanut butter
1/4 cup chocolate chips (optional)
1/3 cup sugar
1/3 cup honey
1/6 cup corn syrup
Coating:
3 oz. Caramel
3 oz. Bittersweet chololate

Instructions

Line a 9” square baking pan with parchment, or, alternatively, butter it well. (These bars are difficult to cut – it is easier if they’re out of the pan and on a cutting block)

Bring all ingredients to room temperature. Put millet in a large bowl. Add nuts and chocolate chips, if using. Stir to distribute ingredients equally.

Mix sugar, honey and corn syrup in saucepan. Slowly heat, stirring, until sugar dissolves. Remove from heat and stir in peanut butter. Mix thoroughly. Add to millet and stir until all puffs are equally coated. Pour out of bowl and into lined pan. Press into a relatively smooth layer.

Using the same saucepan, add bittersweet chocolate and caramel. Again heat slowly, until ingredients are melted. Pour over millet mix and spread into an even layer.

Refrigerate. When chocolate sets completely, remove from refrigerator and cut into bite-sized bars.

    Yeah, I think we'll be making these on the plane for the trip to Disney World in February. My daughter was granted a wish by Make-A-Wish. And then also will make these for our trip to China next year ... adopting our third daughter from there and fifth child overall.

    Charles - What are the nutritional stats on these? I have a backpacking trip this summer and need to pack some high-calorie, high-carb GF food. Thoughts?
