These are perfect in a cup of cocoa or coffee!
This tasty treat is so easy to create. You'll never want to buy marshmallows again, these are so much better than anything you'd find in a package. Makes a wonderful gift or party favor for the holiday season.

3 tablespoons unflavored gelatin
1 cup cold water, divided
2 cups sugar
1 cup light corn syrup
1/8 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon peppermint extract
Optional garnishes: crushed peppermint candies, confectioners’ sugar, chopped nuts, colored sugars or sprinkles
Line a 13“x9” baking pan with foil and spray with non stick cooking spray.
In a large metal bowl, sprinkle the gelatin over 1/2 cup of the cold water; set aside. I used the working bowl of my stand mixer. In a large saucepan, combine the sugar, corn syrup, salt and remaining water. Bring to a boil, stirring occasionally. Cook, without stirring, until a candy thermometer reads 240 degrees (soft ball stage).
Remove from the heat and gradually add to the gelatin. Beat on high speed until the mixture is thick and the volume has doubled. This step can take about 15 minutes, though my Kitchen-Aid stand mixer only took 6 minutes so be careful to watch the progress of your mixer. Spread into the prepared pan. The mixture is really thick and sticky. It spreads easily with a silicone spatula sprayed with a bit of cooking spray, just a touch so that you don’t add too much grease to your marshmallows. Cover and let stand at room temperature for about 6 hours or overnight.
Using the foil, lift the marshmallows out of the pan. Using a sharp knife or pizza cutter, cut into 1-inch squares, or any desired shape using a cookie cutter sprayed with non stick spray. Garnish as desired. Store in an airtight container in a cool dry place.
