Pineapple Pecan Cheese Ball

Fun change from the ordinary "cheese ball" and so yummy! Adapted from a recipe I found in a Taste of Home cookbook. Can be made the day before for easy serving.

Ingredients
2 (8 ounce) packages cream cheese, softened
1 can (8 ounces) crushed pineapple, well drained
1/2 cup chopped green pepper
1/2 cup chopped green onions
1 teaspoon lemon pepper
1 teaspoon seasoned salt (or any gluten MSG free seasoning salt that you prefer, sea salt would work fine too)
2 cups chopped pecans, divided
Instructions
In a large mixing bowl, beat cream cheese until smooth. Stir in pineapple, green pepper, onions, seasonings and 1/2 cup chopped nuts.
Turn out onto a sheet of plastic wrap and shape into a ball. One great tip is to take a bowl and line it with plastic wrap. Press the cheese mixture into the bowl and pull the plastic wrap up around the top of the cheese. You can then easily shape the flat side of the “ball” into a more of a ball, or just leave a flat bottom to place on a your serving plate.
