The best fix it and forget it dinner idea...a sure family pleaser!
ANY pork roast, bone-in or boneless, will make wonderful pulled pork tacos. Cooking all day in a crock pot makes this recipe very hands off and a good choice for those busy days when making dinner is out of the question! A little planning and you have a wonderful dinner in minutes. Best of all, everyone at your dinner table will be asking for more! Make it as spicy or as mild to suit your comfort level. My family LOVES pork taco nights. This recipe does have not "exact" amounts of anything. It all depends on your desired flavor and heat, how big your roast is and how many you want to feed. It's made much like my grandmother and I cook...a little of this and a little of that. Serve with heated corn tortillas, Smoked Paprika Coleslaw (found in the salad section in the recipes), grated cheese...whatever you would like to add to spice it up.

Place the roast and stock in the crock pot. Don’t add so much stock tot he crock pot that the roast is covered. All you need is enough to keep moisture in there while it’s cooking, the roast will also release some of it’s own juices too. Add the remaining ingredients to taste. Put the lid on the crock pot and set to low for 6 hours or high for 4 hours (or until done and falling apart). When the roast is cooked, take it out of the crock pot and allow to set for a few minutes. After it rests, start shredding the meat with two forks, your hands or whatever else will work best for you. The idea is to get shreds of meat that you can later put into a tortilla for tacos.
