Pumpkin Chocolate Chip Cookies safe

A great, healthy alternative to traditional chocolate chip cookies.

If you like pumpkin and chocolate, you'll love these cookies.

Cooking time 12 minutes

Ingredients

1/2 cup butter or non dairy substitute
1 cup white sugar
1/2 cup packed brown sugar
2 eggs, slightly beaten
1 cup pumpkin
1 tsp vanilla
1 1/2 cups white rice flour
3/4 cup tapioca starch
1 1/4 tsp xanthan gum
3 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp salt
1/2 cup chocolate chips

Instructions

1 – In large mixing bowl beat together butter and sugars; add eggs, pumpkin, and vanilla. Mix until well blended.

2 – In medium mixing bowl combine dry ingredients and add to creamed mixture. Stir in chocolate chips. Drop by spoonfuls onto a greased cookie sheet.

3 – Bake at 350 degrees for 12 minutes.
