Quick and Easy Strawberry Rhubarb Pie safe

Using the "Minute" tapioca from the little red box makes this a wonderfully quick and easy pie to make that sets up really well.

Prep time 20 minutes
Cooking time 45-50 minutes
Servings 8

Ingredients

Pie crust (I used TanyaG’s Best Ever Gluten Free Pie Crust recipe)
2 cups sliced strawberries
2 cups chopped rhubarb
1/4 cup “Minute” or instant tapioca pudding mix
1 1/4 cups sugar
1 Tablespoon butter

Instructions

Mix fruit, tapioca, and sugar together in a bowl. Let stand for 15 minutes. While the fruit is working, roll out your pie dough and place the bottom crust into your 9” pie plate. Once the fruit is ready, pour it into your prepared pie plate. Roll out your top crust and lay it over your pie. Seal and flute the edge. Cut several slits in the top crust. Brush with a bit of milk and sprinkle the crust with a bit of sugar. Bake in a preheated 400 degree oven for 45-50 minutes. It’s a good idea to have a drip pan placed on the oven rack below the pie to catch any juices that happen to leak through your crust. If your pie is getting too browned on top, cover with a bit of foil.
