Red Quinoa safe

A delicious but different kind of salad

I just had to try this Red Quinoa when I found it in my local grocery store. It turned out so good. The family loved it.

Prep time 25 min
Cooking time 20 min
Servings 4 to 6 people

Ingredients

1 cup red quinoa rinsed

2 cups water

1/2 medium onion finely chopped

2 garlic cloves chopped

1 bullion cube

1/2 dried thyme

small container cherry tomatoes sliced in half

1 tsp salt

1/4 tsp pepper

Instructions

Heat the 2 cups of water to a boil. While your waiting rinse the quinoa, bullion cube,garlic and salt to the boiling water. Turn the temp to simmer and cover. Simmer for about 15 minutes or until all water is absorbed. Then lift lid and wait five min. Then fluff with a fork.

Add in your finely chopped onions,thyme,pepper,salt to taste. Add in your tomatoes.

You can play with this recipe and make several different salads with quinoa. You could even add chicken to make this a maid dish.
