Roasted Red Pepper Hummus
A zippy twist on an old favorite...hummus, only better!

Perfect for any gathering, or just a tasty snack. Your next party will be a huge hit, especially when you serve this hummus that has just enough zip to keep them coming back for more! Super easy to make, can be made a day or two before your party to cut down on the work as guests arrive.

Ingredients
2 large sweet red peppers
2 cans (15 ounces each) garbanzo beans, rinsed and drained
1/3 cup lemon juice, or to taste (a splash of white wine vinegar works well as well)
3 Tablespoons Tahini
1 Tablespoon olive oil
1 2 teaspoons minced garlic, to taste
1 1/4 teaspoon kosher salt
1 teaspoon curry powder, or to taste
1/2 teaspoons cumin seed
1/2 teaspoon pepper
Instructions
Broil red peppers 4 inches from the heat until skins blister, about 5 minutes. Use tongs to rotate peppers so that all sides are blistered and blackened. Place broiled peppers in a bowl and cover with plastic wrap. Let stand for 15-20 minutes. Peel off and discard skin. Remove stems and seeds. Place the peppers in a food processor along with the rest of the ingredients. Process until well blended. Transfer to a serving bowl. Serve with carrots, celery, corn chips or gluten free pretzels…anything that sounds good to you. Enjoy!
