Smoked Paprika Coleslaw safe

Perfect when paired with Pulled Pork Tacos

This is the perfect topping for the Pulled Pork Tacos in the main dish recipe section. My family often eats as much coleslaw as they do pork on their tacos. One of our family favorites. As with the Pulled Pork Taco recipe, this is also not an exact recipe. It's one you have to play with a bit...taste and adjust to your liking.

Servings Depends on the size of your head of cabbage

Ingredients

1 head of cabbage

For dressing:
mayo
buttermilk
salt
sugar
apple cider vinegar
smoked paprika

Instructions

Chop your cabbage small, or shred it as with other coleslaw recipes. Place the cabbage into a large bowl, one that will give you room to mix the dressing in thoroughly.

For the dressing: depending on your head of cabbage, add about one half to one cup of mayo (more if you want it thicker) into a small bowl. Stir in enough buttermilk to make a thick dressing. The goal is not to have the dressing thicker than most cake batters, if you are looking at cutting fat and calories make it thinner. All you really want is for the dressing to coat the cabbage. Once you have your desired consistency start adding your seasonings. Your end result should be slightly sweet, an ever so slight hint of vinegar as with any coleslaw and a smoky flavor from the paprika. Your coleslaw will be slightly pink in color. Season it to your taste.
