Soft Sugar Cookies
Great soft sugar cookie recipe.

If you prefer moist, soft sugar cookies over crispy ones, this is the recipe for you.

Ingredients
Cookies:
2/3 cup shortening
3/4 cup sugar
1/2 tsp vanilla
1 egg
4 tsp milk
2 cups gluten-free flour (see notes*)
1 1/2 tsp baking powder
1/4 tsp salt
1 tsp xanthan gum
*Note 1 – The recipe author makes her own gluten-free flour by combining 2 cups white rice flour, 2/3 cup potato starch, and 1/3 cup tapioca flour.
*Note 2 – You can also make your own gluten-free flour by combining 4 cups rice flour, 4 cups bean flour, 4 cups potato starch, 2 cups tapioca flour, and 7 tsp guar gum.
Frosting:
1 chunk white chocolate
Instructions
Cookies:
1 – Cream first 3 ingredients, then add egg and beat until light and fluffy.
2 – Stir in milk.
3 – Stir together dry ingredients and blend into creamed mixture.
4 – Divide dough in half and chill for one hour.
5 – Roll (slightly thick) out on lightly floured (gluten-free) surface. (You may need a little gluten-free flour on the rolling pin if it sticks.)
6 – Bake on greased cookie sheet 6-8 minutes at 375 degrees. (You can also line the cookie sheet with parchment paper and just pull the parchment paper off the cookie sheet to set on a cooling rack to cool.)
*Be careful as cookies are fragile when warm.
Frosting:
1 – Melt 1 chunk white chocolate to frost when cookies are cool; sprinkle with colored sugar, etc.
