Spooky Cupcakes
The perfect chocolate cupcake for a spooky Halloween!

These yummy cupcakes will add a bit of spook and chocolate to your Halloween party! Chocolate brings life to any party. Decorate with your favorite Halloween or fall theme and watch them disappear from your table. Your little goblins will gobble them up!

Ingredients
1/2 cup sorghum flour
1/2 cup tapioca flour
1/2 cup rice flour
1 cup cocoa, sifted
1/2 tsp baking soda
2 1/2 tsp baking powder
1 1/2 tsp xanthan gum (2 1/4 tsp of guar gum if corn is to be avoided)
3/4 cup salted butter, room temperature (if you use unsalted, add 1/2 tsp salt to the dry ingredients)
3/4 cup brown sugar
1 cup granulated sugar
3 large eggs
2 egg yolks
2 tsp vanilla
1 tsp orange extract (if desired)
1 1/2 cups buttermilk
Instructions
1 – Preheat the oven to 350 degrees.
2 – Line your muffin pan with paper liners or grease each cup if not using decorative paper liners.
3 – Sift the three flours together.
4 – Add cocoa, xanthan gum, baking powder, and baking soda to the flours and whisk together in a medium bowl.
5 – Beat the butter until creamy.
6 – Slowly add the brown sugar and the granulated sugar; whip until fluffy.
7 – Add the eggs and the egg yolks one at a time. Add the vanilla. Turn the mixer to low and alternately add the flour mixture and the buttermilk.
8. Spoon batter into 24 muffin cups. Bake 15-20 minutes or until the cupcakes test done.
9. Frost with your favorite flavor of frosting. A good choice would be orange flavored frosting, but any kind of frosting would work fine.
