Sticky Cinnamon Buns
Gooey, sweet, nutty, spicy and gluten free. A must for any party!

A GF take on the classic.

Ingredients
264 grams featherlite flour
68 grams brown rice blend
1 tsp salt
2 tsp xanthan gum
1/2 cup butter cool (@65 degrees F)
1/4 cup melted butter
2 egg yolk
240 gram warm water
50 gram sugar
2 pkg dry yeast (14 gram)
1 cup pecan halves
1/4 cup honey
2 tblsp Turkish mastic
Filling:
2/3 cup packed brown sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup crushed pecans, toasted
Instructions
Mix warm water w/sugar + yeast. Set aside. Blend filling mix in small bowl. Line 9” springform pan w/ parchment and spray w/ oil. Sprinkle pecan halves over the parchment and drizzle w/honey. Blend dry ingredients. Work butter into dry as for pie crust. Add egg. Add water + yeast. Mix until dough leaves bowl sides. Turn out onto flour-dusted plastic. Roll to a sheet that is @ 1/8” thick. Coat w/ the melted butter, then sugar/pecan/cinnamon filling. Roll into tube. Cut into 12-18 rolls. Turn edgewise. Place in pan. Set to proof at 80 F for 2 hours. Bake at 350 40+/-’. when golden brown remove from oven. Cool 10 min, remove pan edge then invert over plate. Drizzle w/ warm mastic.
