Strawberry Cupcake safe

This is a very easy recipe to make. I really like the freshness from the strawberries in these cupcakes.

Prep time 20 minutes
Cooking time 15 to 20 minutes
Servings 8 cupcakes

Ingredients

Preheat oven to 350 degrees

1/2 cup coconut flour
1 tablespoon arrowroot flour
1/4 teaspoon salt
1/2 teaspoon baking soda
4 large eggs
1/2 cup agave nectar
1 tablespoon vanilla extract
1/2 cup finely chopped fresh strawberries

Instructions

In a bowl combine coconut flour,arrowroot flour,salt,and baking soda. In another bowl add eggs,agave nectar,vanilla extract,and fresh strawberries. blend together the wet ingredients then add the dry ingredients to the wet.

pour batter into prepared muffin cups to about 1/4 full.

Bake at 350 for about 15 to 20 minutes.

Decorate with your favorite frosting!
