Strawberry Rhubarb Cobbler safe

All of the flavor of strawberry rhubarb pie without the work.

Super tasty and the perfect way to take advantage of the fresh strawberries and rhubarb of summer! Add a scoop of ice cream or a dollop of whipped cream for an extra special treat. Yummy!

Prep time 10-15 minutes
Cooking time 45 minutes


1 quart chopped rhubarb
2 quarts strawberries (whole)
1 cup sugar
1/2 cup butter, or non dairy margarine
1 cup sugar
1 cup gluten free flour blend
2 tsp baking powder
1/4 tsp salt
1 cup whole or 2 percent milk, or non dairy substitute


Place fruit and sugar in a sauce pan and cook until the rhubarb is soft. While the fruit is cooking, melt the butter and place it in a 9×13 inch baking pan. Mix the remaining ingredients together and pour over the butter. Do not mix. Spoon only the fruit over the batter in the baking pan. Bake for 45 minutes in a 350 degree oven, or until browned evenly.
