Stuffed Pumpkin French Toast safe

Amazingly tasty, this will become a family favorite for sure!

Simple enough for any day of the week, but special enough for holidays too. Your family will be amazed at how delicious this is. The flavor combination is so amazing!

Prep time 10 minutes
Cooking time 20 minutes
Servings 4-6

Ingredients

1 loaf gluten free bread (I used GF French bread, but any would work), sliced about 1/2” thick or desired thickness
3 eggs, beaten
1 cup milk
1/2 cup pumpkin puree
1 Tbsp sugar
1 tsp pumpkin pie spice
1/2 tsp vanilla

Cream Cheese Spread

8 ounce cream cheese, at room temperature
1/2 cup sugar
2 tsp pumpkin pie spice
1/2 cup pumpkin puree

Instructions

Slice bread, set aside.Heat griddle or pan to about medium heat and lightly coat with oil.

Combine eggs, milk, pumpkin, sugar, pumpkin pie spice and vanilla. Dip the slices of bread and place on the heated griddle or pan. Cook until browned on one side and flip to brown second side. Repeat with remaining bread until the egg mixture is gone.

To serve, combine cream cheese spread ingredients, spread onto a piece of French toast and place a second piece of French toast on top like a sandwich. Serve with cinnamon sugar, powdered sugar, maple syrup and/or whipped cream.
