Sun-dried Tomato Pesto Chicken With Pine Nuts
Very yummy chicken. This is even better the next day

I love this recipe. It is pretty easy to make. The taste is so rich and flavorful.

Ingredients
1 cup sun dried tomatoes
1/2 cup roasted peppers from jar
2 cloves garlic
1 cup packed fresh basil
1/2 cup freshly grated parmesan cheese (plus more for garnish)
pinch salt
pinch freshly ground black pepper
2 tablespoons olive oil
2 tablespoons pine nuts
4 boneless chicken breasts
Instructions
In a food processor or blender place the sun-dried tomatoes, roasted bell peppers,parmesan,basil leaves,garlic cloves. Process a few times. Then add the olive oil and continue processing until blended.
Salt and pepper the chicken. Put the chicken in a baking dish and top with the Pesto. Then sprinkle the pine nuts on top. Bake at 350 for about 30 minutes.

It was delicious! I doubled the recipe and dropped some off for some friends suffering with the dreaded H1N1. They were delighted about how good it looked and smelled! I served it with a bacon, onion, green bean dish topped with sour cream and chives. It was pretty perfect. And of course my hubby had a dinner roll. Thanks for the recipe!
