Tealeaves Asian Meatballs with Lime Dipping Sauce
Tasty, moist meatballs... they go great with rice or rice noodles

These meatballs are simple to make, the lime sauce makes them very different and irresistible. I dare you to eat just one. best served with rice or rice noodles.

Ingredients
For Meatballs:
1/4 cup whole milk
1/4 cup gluten free crushed cracker crumbs (I use Glutino brand “original” crackers) or bread crumbs
3/4 lb ground pork
3/4 lb beef
1 beaten egg
1/2 cup chopped water chestnuts (and/or chopped canned bamboo shoots.)
1/2 tsp salt
1/2 cup chopped fresh parsley or cilantro
1 Tbsp gluten free tamari (gluten free soy sauce)
2 tsp Asian sesame oil
For Lime Dipping Sauce:
2 Tbsp lime juice (fresh squeezed is best!)
2 tsp Asian sesame oil
2 tsp sugar
2 Tbsp water
4 Tbsp gluten free tamari (gluten free soy sauce)
Instructions
Preheat oven to 500 degrees
pour milk over bread/cracker crumbs, stir let soak. Add lightly beaten egg, ground pork and beef, salt, parsley or cilantro, 1 Tbsp soy sauce, 2tsp sesame oil, combine well. Shape into approximately 2Tbsp-size rounded balls and place on lightly greased 13×9 inch glass pan (or cookie sheets) about 2 inches apart.
bake for 15 minutes or until cooked through.
Sauce:
While the meatballs are baking, combine lime juice, sesame oil, sugar, water, and soy sauce in amounts listed for sauce above.
drizzle sauce over meatballs and serve hot. Optional: I like to make extra sauce and serve on the side. I serve this with fried mung bean noodles or rice.
