Touch of Coconut Biscuits safe

These are just so fluffy and good

Prep time 15 minutes
Cooking time 10 to 12 minutes
Servings 9 biscuits

Ingredients

1/2 cup white rice flour
1/4 potato starch
1/4 tapioca starch
1 tsp xanthan gum
2 tsp baking powder
1 tsp baking soda
1 1/2 teaspoons sugar
1 tsp salt
2 Tbs coconut flour
2/3 coconut milk
1/4 applesauce unsweetened
1/4 cup canola oil
1 tbs lemon

Instructions

Heat oven to 450 degrees

Whisk dry ingredients in medium bowl.

Add the lemon juice to the milk.

Add all ingredients except the milk mixture.

When combined add the milk mixture and mix well.

Drop tablespoon scoops onto either a pan lined with a silpat or parchment paper. They need to be two inches apart.

Bake for about 8 to 12 minutes

Makes about 9 biscuits
