Turkey and Wild Rice Soup
The perfect soup to make with that leftover turkey! Comfort food at it's best.

This is the perfect way to use every last tasty goodness from those leftover turkey bones. Even if all you have is a turkey leg and some leftover meat. It's easy to make and well worth the little bit of effort involved.

Ingredients
Leftover turkey bones or a couple of turkey legs
1 gallon water
1 teaspoon apple cinder vinegar
salt and pepper, to taste
1 medium onion, chopped
6 medium carrots, diced
6 celery stalks, diced
garlic and onion powder to taste
1 cup wild rice blend
1/2 cup heavy cream
Instructions
Put turkey bones in large pot, add water and vinegar. Bring to a boil, reduce heat to a simmer. Let simmer 1 hour or until bones start to come apart and the meat is falling off of the bones. Remove all of the bones from the pot and allow them to cool enough to handle. In the mean time, chop the vegetables and add them to the stock. Remove the meat from the bones and add it to the stock. Once the vegetables have cooked, about 20 minutes, add the rice blend. Allow rice to cook completely. Just before serving, stir in heavy cream. You may top with dumplings for a heartier version of this soup.
