Twice Baked Potato
One of the best way to have a baked potato.

Looks fancy, tastes out of this world and oh so easy to make!

Ingredients
4 large baking potatoes
1/2 cup sour cream
Onion powder (to taste)
Garlic powder (to taste)
Salt (to taste)
Pepper (to taste)
4 ounces cream cheese
2 cups shredded cheddar cheese (divided)
Chives (to taste)
Instructions
Scrub potatoes clean, pierce with a fork and bake in a 375 degree oven for 1 hour or until tender. Remove from oven and allow to cool until you can easily handle them.
Cut the potatoes in half lengthwise and scoop out the center of the potatoes, leaving about 1/4 inch of potato next to the skin intact. Reserve the potato you just scooped out and place in a mixing bowl. Place hollowed out shells on a baking sheet or in a baking pan.
Add to the potato in the mixing bowl, all of the ingredients except for 1 cup of the grated cheddar cheese. Mix this all together and then spoon into the potato skin shells on the baking sheet. Sprinkle remaining cheese on top of the filled potato shells and bake in a 400 degree oven for 20 minutes or until filling is golden brown.
