Upside Down Plum Cake safe

Super tasty and easy to make.

This cake feeds a crowd. Makes 2-9" upside down cakes that are loaded with flavor. The perfect way to enjoy those juicy summer plums.

Ingredients

Syrup layer:

1/2 cup butter
1/4 cup whipping cream
1 cup packed brown sugar
10 plums, cut in half and pits removed

Cake layer:

2 cups gluten free flour blend
scant 1/4 cup gluten free flour blend
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons baking powder
1 teaspoon xanthan gum
4 eggs
1 1/4 cups granulated sugar
2/3 cup mayonnaise
1 cup milk
1 Tablespoon vanilla extract

Instructions

Preheat oven to 350 degrees. In a 1-quart heavy saucepan, cook butter, whipping cream and brown sugar over low heat until the butter is melted. Make sure you stir it from time to time. Pour into 2 lightly greased 9” round cake pans. Place plum halves in the bottom of the pans, cut side down.

In a small bowl, combine the dry ingredients for the cake layer.

In a mixer bowl, beat the eggs, sugar and mayonnaise until fluffy. Add the flour mixture, milk and vanilla. Mix well. Carefully pour cake batter over and around the plums so that each pan has an equal amount of batter. If your plums are large, some of them may sit taller than the height of the batter. This is not a problem.

Bake in a 350 degree oven for about 40 minutes. Test with a tooth pick to see that the middle cooks through. Remove from the oven and allow to cool for 10 minutes. Invert a cake plate or large dinner plate over the top of the cake. Carefully hold the cake pan and plate together with a towel or pot holders and flip the cake pan and plate over so that the pan is sitting on top of the plate. Allow this to sit while you flip the other cake out. Gently remove the cake pan from the cake. There will be some caramel glaze that comes out and around the cake. Allow to cool for at least 10 more minutes before slicing. This is a very moist cake.
