Wendy Wark's Gluten-Free Flour Mix
A very versitle flour blend, can be used cup for cup for wheat in a recipe!

A wonderful blend of flours that work wonderfully together! One of the best gluten-free flour blends I have used to date.

Ingredients
1 cup brown rice flour (requires refrigeration)
1 1/4 cup white rice flour
1/4 cup potato starch flour
2/3 cup tapioca starch flour
3/4 cup sweet rice flour
1/3 cup cornstarch
2 teaspoons xanthan or guar gum (I prefer xanthan gum)
Instructions
Combine and store in an airtight container in your refrigerator. Works cup for cup in recipes calling for wheat flour. If using this in a recipe for cake or quick bread and some cookies, add an additional 1/2 teaspoon of xanthan or guar gum to your recipe if converting a gluten recipe to gluten-free. Pancakes, waffles and such do not normally require the use of additional xanthan or guar gum.

I'm wondering where I would get some sweet rice flour? Also, can I just grind up my rice in my Nutrimill?

Look at your local specialty food store, or there are many places on line that you can order it from. I have not tried grinding my own rice into flour, but do have a friend that does that. Saves a bit of money, that's for sure. You might want to do some reading on what kinds of rice produce the kind of flour you are looking for. Let me know how it works out for you, I may try this too. :-)
