starting out as a gluten free college student!?!
I know some people who are gluten-free and are transitioning from "kid in a gluten free home" to living on their own in a dorm or apartment situation and trying to figure out how to take care of their gluten-free diet. Any tips for them, since prepackaged GF foods are so expensive? What are some simple staple meals they can prep without much cost or fuss?

I am a college student also! Although I currently live at home, I am soon going to make the switch to living on campus. Do they have their own kitchen in the dorm room? or do they go to the cafeteria for most of their meals?
If they have their own kitchen it will make things much easier. There are many foods that are naturally gluten free such as vegetables, fruits, and meats. Also most yogurts are gluten free, and there are quite a few yummy gluten free cereals.
It can be harder if there is not a kitchen in the room. However most colleges will make accommodations for students requiring special diets. I would just talk to them before each semester starts and go over the diet and any concerns. Most colleges are fairly used to making adjustments since their are many people needing restricted diets. Also it is great to just have a few gluten free snacks on hand.

Hey you two! I'm going to have to second the DitchtheGluten feedback. I work with colleges everyday and "most" are very willing to work with your dietary needs. A lot even have dedicated dieticians on hand to counsel and plan meals. (Often you will eat better than everyone else!)
Another suggestion is to find out who the vegetarians are. A lot of them cook GF naturally. Trade meal nights. One night you cook, then they cook.
Or do a meal swap. I used to love that. Cook a big meal, divide it into portions. Then meet up and swap meals.

I am also a gluten free college student. It can be hard, but it can be done. One tip is to tour the campus first, and try a meal in the dining hall. Meet with the manager, or maybe your school has a dietician you can meet. Imagine eating there EVERY DAY and think about if you can survive. Other than that, keep a lot of your favorite gluten free snacks in your room.
